ORANGE, PASSIONFRUIT AND THYME GIN CRUSH

This cocktail is bright and fruity. Also a perfect cocktail by leaving out the gin.
- 1 passionfruit, halved
- 1/4 cup (60ml) gin
- 1 teaspoon Angostura aromatic bitters
- 1/2 cup orange juice
- 2 sprigs fresh thyme
- Crushed ice, to serve
- Orange slices, to serve
Strain passionfruit through a fine sieve. Add juice and a little of the passionfruit seeds to a jug. Discard remaining seeds. Add gin, bitters, orange juice and thyme to jug. Stir to combine.
Divide crushed ice and orange slices between 2 serving glasses. Pour over gin mixture. Serve.
For an extra special twist, dip the rims of the glasses in water and then sea salt before pouring in the cocktail.
Leave out the gin for an alcohol-free version.
